Clean the Hilsa fish pieces and pat them dry.
Make a paste with mustard seeds, green chilies, salt, and a bit of water.
Heat mustard oil in a pan until it smokes lightly.
Add the mustard paste and turmeric powder, cook for a couple of minutes.
Add water to make a gravy and bring it to a boil.
Carefully add the fish pieces into the gravy.
Cover and cook for 6–8 minutes on medium heat until the fish is done.
Garnish with slit green chilies and serve hot with steamed rice.
